Friday Five: Healthy Tools

Hello and happy Friday!

I wanted to take the time to share a few tools I use to stay healthy. Some of these I’e been using for a while, some I’ve only recently found. Hopefully some of these will be able to help you on your journey to a healthier you!

  1. My Fitness Pal App. You probably know of this app already, but I do think it is a great tool to help you get back on track. I don’t like to use it constantly because I really hate counting calories. I use it as a way to “relearn” how much my body needs. We tend to overindulge over holidays, and sometimes it is difficult to go back to healthful habits. My Fitness Pal also tracks your steps, and adjusts your calories accordingly. Definitely worth checking out if you haven’t already!
  2. YouTube. Because of the amount of fitness videos available on YouTube, we have no excuse to not exercise! There are yoga videos, kickboxing videos, pilates videos. You name it, YouTube probably has it. Some of my favorite channels include Yoga With Adriene, Blogilates, and Tone it Up.
  3. Charity Miles. It’s an awesome app that is totally free. Basically, this app tracks how many miles you walk/run/bike. For every mile, a sponsor donates a quarter to a charity you specify at the beginning of your workout. It definitely encourages you to, excuse the cliche, go the extra mile 🙂
  4. The Blogosphere. Seems simple enough. I love following the blogs of real people who are on the same health journey I am. It’s super inspiring, and a lot of them post healthy recipes that are simply delicious. I also follow people who are already where I want to be. Some of my favorites include SimplyTaralynn, MindBodyGreen, YourZenLife, and Wellness Mama.
  5. A well-stocked kitchen. Obviously. But sometimes, it’s harder than you’d think. Make sure you always have some healthy staples (fresh fruits, veggies, and lean sources of protein) ready to go. It’s hard to make healthy choices, but keeping your kitchen stocked with good-for-you foods makes it much easier.

Yogi Surprise: May Unboxing

First: I apologize for being MIA. Again. I’m still driving the struggle bus to Time Management Town. I have a little free time this evening, so I am writing up a few blog posts to post over the next couple of days. Moving on…

I love this subscription box. It is so fun, and I love every item! It’s like a birthday at the beginning of every month. Except I’m not any older; just more centered. 🙂

I was super pleased with this box. I knew what two of the items were prior to getting the box. Yogi Surprise sends out a spoiler or two every month.

I was immediately in love 🙂 Any box containing any type of tea is fantastic and is a winner in my book.

As always, the box contained a card detailing each item. The total value for this box is about $73. For $45 per month, that isn’t bad 🙂

Anyway, on the left we have Luv Superfoods Beegan-bites. I was pretty excited about these… Until I bit into one. Huge chunks of almonds. Now normally, I’d be stoked. But I have braces… So unfortunately, these went to hubs. He loved them.

Again, tea. I love tea. This is green tea, which I am currently obsessed with. I haven’t had a chance to try this yet, but I am pretty pumped about it!

On the left is a gorgeous Om pendant. I am so excited to wear it! I think it’d be lovely with a plain gray v-neck.

On the right is a Tibetan prayer flag. I plan on setting these up in my “yoga room” whenever we move this fall.

Left: Moon Valley Organics Peppermint Foot Rub. Smells amazing and I’ve heard really great things about this company.

Right: Yoga Mind Mouth Mist. This mist has an interesting scent and taste. It has a few essential oils that are supposed to help center you before or after practice.

Crustless Breakfast Quiche

I guess this is quiche? We had tons of of leftover “stuff” I needed to use up before it went bad. Frittata is usually fried (right?), and I wanted to at least keep this mostly healthy.

Anyway, I wanted to have nice Sunday breakfast with hubs, so I came up with this. It has eggs (duh), tons of spinach, bacon, parmesan, and potatoes. Super simple and super delicious. You get 1/8 of the “pie” for less than 200 calories and 11 grams of protein. Woo!

Crustless Breakfast Quiche

Ingredients:

  • 9 large eggs
  • 1/2 c. heavy cream
  • 6 slices bacon (I used center cut)
  • 1 c. spinach, chopped
  • 1 potato (baked or pan fried and diced)
  • 1/4 c. grated parmesan
  • Salt, pepper, onion powder, garlic powder

Method:

  • Preheat oven to 350. Spray round dish with non-stick spray (I actually have a quiche pan…haha…but a pie pan would be fine)
  • Spread (sprinkle?) diced potato on bottom of dish. This probably won’t cover the dish, and that’s alright 🙂
  • Whisk together seasoning (to your taste), eggs, and heavy cream until nice and fluffy. Pour over potatoes.
  • Layer spinach over eggs. The spinach will kind of sink down, but will mostly remain on the top half.
  • Sprinkle bacon and cheese over quiche.
  • Bake for about 30 minutes, or until done and set in the center. I think mine took just over 30? Ovens vary 🙂

I served this with fruit and sriracha (duh). And coffee. Because coffee is everything on a Sunday morning 🙂

Pretty, huh? YUM. This can easily be altered to use leftovers. Diced ham, tomatoes, and swiss would be delicious!

Lemon Blueberry Cake

I do apologize for being MIA. Nursing school has gotten even crazier, if you can believe that. I’ve got tons of posts I’m working on. Hopefully they’ll get out to you over the next couple of days 🙂

If you follow me on Instagram (and if you don’t, you should! Here), you know that I baked the most wonderful lemon blueberry cake last week. I originally found the recipe on Pinterest from one of my favorite blogs, Sally’s Baking Addiction. You can find the original recipe here. I only changed a couple of things to suit what I had on hand.

It’s such a great lemon-flavor! The tart cake is well-balanced with pops of sweet blueberries and a delicious cream cheese frosting.

Lemon Blueberry Cake with Cream Cheese Frosting

Ingredients:

  • Cake:
    • 2 sticks room temperature butter (Kerrygold is my favorite, but I only had just your standard, unsalted butter on hand)
    • 1 1/4 c. granulated sugar
    • 1/2 c. light brown sugar
    • 4 eggs
    • 2 tsp. vanilla extract
    • 1 tbsp. baking powder
    • 1/2 tsp. salt
    • 1 c. buttermilk
    • Zest and juice of 3 large lemons
    • 2 pints of blueberries (I reserved a couple handfuls for decoration) mixed with a tbsp. flour
  • Cream Cheese Frosting:
    •  8 ounces cream cheese (do yourself a favor and get the full fat fun stuff)
    • 1 stick unsalted butter
    • 3 1/2 c. powdered sugar
    • 3 tbsp. heavy cream
    • 1 tsp. vanilla extract
    • Dash of salt

Method:

  • Cake:
    • Preheat oven to 350. Spray two cake pans with non-stick spray
    • Beat butter on medium speed until nice and fluffy
    • Add in sugars, and continue to beat until creamed. Don’t forget to scrape down the sides of the bowl as needed!
    • Add eggs and vanilla. Beat until creamed.
    • On medium-low speed, add in powder and salt. Add in flour a little bit at a time. Immediately move on to the next step.
    • Add in lemon juice, zest, and buttermilk. Mix until combined and lump-free.
    • Gently fold in blueberries. Gently, ya’ll.
    • Resist urge to eat batter.
    • Pour into cake pans (batter will be super thick). Bake until toothpick comes out clean. I believe these were in my oven for about a half hour.
    • After the cakes are done, let sit for about 5 minutes. Transfer cakes to a wire rack to cool completely.
    • Allow to cool completely before frosting. You do NOT want to deal with that mess 🙂
  • Cream Cheese Frosting:
    • Beat together cream cheese and butter until totally smooth
    • Slowly add in powdered sugar.
    • Add in heavy cream, vanilla, and salt.

Once the cake has completely cooled, frost to your little heart’s content. If you’d like, you can “make it pretty” by arranging blueberries or lemon slices on top. Just make sure you refrigerate the cake for an hour or so before serving. Otherwise that sucker is going to fall apart. I stored mine in the fridge too. Trust me: it’s moist enough that the fridge totally doesn’t ruin it 🙂

Mini Stuffed Peppers

I have a serious love for stuffed peppers. And I have a serious soft spot for all things mini. Just so cute! Kroger’s mini peppers were on sale for $1.99 (whaaaat?), so I grabbed a bag and decided to make baby stuffed peppers.

Great idea in theory. Those suckers are way difficult to stuff. Nonetheless, they were delicious, cute, and quick, and I WILL be making them again. Maybe with an Italian twist?

Anyway, I paired these Mini Mexi Peppers with refried beans (I LOVE them!). How hilarious is this can?

Mini Stuffed Peppers

Ingredients:

  • 8 mini sweet peppers
  • 1/2 pound ground turkey
  • 1/2 c. shredded cheese (I used fiesta blend for some added spice!)
  • 2+ tbsp taco seasoning (amount totally depends on your preference)
  • 1-2 garlic cloves, minced
  • “splash” of olive oil
  • 1 can Rotel (or other tomato and green chile brand)
  • 8 jalapeno slices (I used pickled because that’s what was on hand)

Method:

  • Preheat oven to 350.
  • Seed and half the peppers, long-ways. Put pepper halves in a bowl of hot water to soften and become more pliable.
  • Cook garlic cloves with oil and turkey and seasonings until brown and no longer pink.
  • Add drained Rotel, and mix well. I kind of break up the tomatoes a little bit to make them mix better with the meat.
  • Drain peppers and set them on a cookie sheet.
  • Stuff each pepper as best as you can 🙂
  • Top with the cheese, and jalapeño slice on each pepper.
  • Bake until the cheese is bubblin! I chose to broil mine a bit, because I LOVE that browned cheese taste! YUM.
