My life has been crazy the last month. I’ve tons of tests and papers due, I got a job (!), and my dad is retiring so we have been all over the place. But, I am going to be better (for real this time).
As a peace offering, I have this DELICIOUS chicken salad recipe for you. It is my favorite! Every time I want chicken salad, I whip this up!
Light Chicken Salad
- 1 lb chicken breast, cooked and shredded
- 1/2 red onion, chopped
- 1 c. grape halves
- 2 stalks celery, diced
- 1 container of plain greek yogurt
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp lemon juice
- 1/3 c. dried cranberries
- 1 small apple, chopped
First, gather up all of your ingredients and chop/shred/dice!
Next, make the dressing with the container of greek yogurt, 1 tbsp of lemon juice, 1 tbsp of garlic powder, 1 tbsp onion powder, and salt and pepper. Mix well!
Add in the fruits and veggies, and gently mix so everything is nice and coated in the dressing.
Add in the chicken…
I serve mine on romaine lettuce wraps. It’s super fresh! It makes 4-1 cup servings. Each serving is 6 WW points+.
And now for a progress pic… The one on the left is from around this time in 2012. The one on the right was taken about a week ago. You may not be able to tell, but there is about a 20 pound difference between the photos!
